Where to start with Stereolab? They've got such a vast discography that it's hard to know where to begin, and their style changed pretty radically over the years, too. Probably the best place to jump in is this anthology: http://www.last.fm/music/Stereolab/Serene+Velocity:+A+Stereolab+Anthology. Then, if you like what you hear, maybe give the albums a go. They're all pretty good (with the possible exception of the last two and "Cobra and Phases," which are a bit patchy). I'd start with "Emperor Tomato Ketchup" or "Transient Random." Hope you enjoy!
