The Mariachi Vargas is if not the best surely one of the best on this gender. I don't know how found you are about classical but you should listen to El Uapango de Moncayo its great! Or Trios like Los Panchos and moving on to a more contemporary music I would suggest two rock bands Caifanes and Café Tacvba; with a rock pop style you could listen to Maná or Julieta Vengas.
