Well, the problem is that Costello's albums are widely varied, so it's all about a listener's taste than any essentials. However, /mu/ requires you to at least listen to his first album, "My Aim is True." After that, you could look for the two-CD "Very Best of Elvis Costello" as a sampler of his other works. As for personal favorites, mine is "Armed Forces."

Beefheart, you probably started with one of his more experimental albums, so you should listen to Safe As Milk, if you enjoy it, try Shiny Beast (Bat Chain Puller), it much harder, don't expect to like it first listen. Ms. Newsom is a contemplative folk singer, try to listen to the lyrics, and tell me what you think. Zappa is just a fucking wierdo and you have to understand that most of his albums are elaborate jokes, except Hot Rats, which has a nice jazzy feel. There you are.
