Blonde on Blonde, Bringing it All Back Home, and Highway 61 Revisited are essential, especially for his older work. Blood on the Tracks is excellent as well. As for his newer work, Time out of Mind is another timeless classic of his. Love and Theft and Modern Times are excellent as well. Together Through Life, which he put out last year, is a step down, but still enjoyable. His live album MTV Unplugged provides a broad spectrum of his work through the years.
