To cook a tender steak, it’s crucial to start with a good quality piece of meat. Look for cuts that are well-marbled with fat, such as ribeye or New York strip. Before cooking, allow the steak to come to room temperature, as this ensures even cooking. Season the steak generously with salt and pepper, or your preferred steak seasoning, and let it sit for at least 30 minutes to allow the flavors to penetrate the meat. For the cooking process, preheat a heavy skillet or grill pan over high heat. The pan should be hot enough that it sizzles when you place the steak on it. Sear the steak for a few minutes on each side to create a caramelized crust. Then, reduce the heat to medium and continue cooking to your desired level of doneness. Use a meat thermometer to achieve the perfect temperature: 120°F for rare, 130°F for medium-rare, 140°F for medium, and so on.
