Nato a Dublino nel 1959, David comincia a suonare le Uillean Pipes a 12 anni e si esibisce in vari festivals irlandesi. A partire dal 1978 comincia a comporre brani meno legati alla tradizione irlandese e nel 1981 fonda i Moving Hearts assieme a Christy Moore e Donal Lunny. Nel 1992 compone un lavoro orchestrale, "The Seville Suite", in seguito collabora con Davy Spillane e Andy Irvine per "East Wind" e nel 1995 lavora a "Riverdance" con cui gira tutta l'Europa assieme a ballerini e musicisti tra cui Eileen Ivers, Davy Spillane, Ronan Browne e Martin O'Connor.
Davy ha composto musica per vari film tra cui Cime Tempestose di Peter Kosminsky e nel '95 il film film Rob Roy. Ha inoltre lavorato con Kate Bush per l'album Sensual World (1989), con Mike Oldfield per l'album Voyager (1996), con Bryan Adams per l'MTV Unplugged, con Van Morrison e Elvis Costello. E'inoltre un collaboratore del progetto musicale Afro Celt Sound System.
