In 1991, director Jon Avnet and the producers of “Fried Green Tomatoes” asked Grayson Hugh to record his version of Bob Dylan’s “I’ll Remember You” for the end-title song to the film. Grayson drew on his experience as a young man playing the piano in a gospel church and arranged Dylan’s song in that style. For the recording, Hugh used a gospel choir and members of Eric Clapton’s touring ensemble as his backup band. Hugh sang and played Hammond B3 organ on the track.

MCA, Grayson’s label at the time, released “I’ll Remember You” as the first single from his 1992 “Road To Freedom” record. “Soul Cat Girl” (with it’s accompanying video) was the follow-up single.
