DTD/XSD?
Are there any DTD or schemas for the output of the web services?
I notice that you don't seem to follow musicbrainz's way of defining tracks and so on although you do reference the mbid.

No there aren't, and we don't have any plans for any either.
We don't use the MusicBrainz RDF module because our XML files aren't RDF. They're designed as a simple way to get at the data in a structured fashion.
As I mentioned, RDF is coming.
